- 3 egg whites
- 2 cups panko breadcrumbs
- 1⁄2 teaspoon kosher salt
- 1⁄4 teaspoon fresh ground black pepper
- 1 lb large shrimp (peeled and deveined, 24 shrimp)
- canola oil cooking spray
directions
- Place egg whites in a bowl and whisk until frothy.
- Place panko in a separate bowl and season with salt and pepper.
- Pat shrimp dry with a paper towel.
- Working in batches, dip shrimp into egg white, followed by panko, coating both sides.
- Spray half the shrimp with oil spray, place in the air fryer basket and cook for 10 minutes, turning once, until crisp and golden.
- Using tongs, remove the shrimp from the basket and transfer to a plate.
- Repeat with remaining shrimp.
- Serve immediately.
