- 2 cups broccoli, frozen chopped
- 1 tablespoon water
- 1 tablespoon butter
- 1⁄4 cup onion, chopped
- 3 tablespoons flour
- 10 1⁄2 ounces canned chicken broth
- 2 cups cooked ham, cubed
- 1 cup sour cream
- 4 1⁄2 ounces canned mushroom slices, drained
- hot cooked noodles
directions
- Place broccoli and water in a 1 quart microwave-safe bowl.
- Cover and microwave on high for 3 to 5 minutes, or until the broccoli is tender, stirring once.
- Drain; set aside and keep warm.
- In another microwave-safe bowl, heat butter, uncovered on high for 20 seconds, or until melted.
- Add onion, cover and microwave on high for 2 minutes, or until tender.
- Stir in flour until blended.
- Gradually, stir in broth; mix well.
- Microwave, uncovered, on high for 4 to 6 minutes, or until thickened and bubbly, stirring once.
- Add the ham, sour cream, mushrooms and reserved broccoli; mix well.
- Cook, uncovered,on high for 3 to 5 minutes, or until heated through, stirring once.
- Serve on noodles.

What if I have no leftover ham? I don't think Deli ham would be as good, unless I get a rather thick slice of Virginia Ham. I also don't usually have frozen broccoli on hand, but it seems fresh would work well, (with less cooking time,) I am alone, so will this be good as leftovers? I wonder about the Sour Cream curdling. HELP!

I've made this several times over the years using fresh broccoli (florets and thinly sliced stalk). I use one pound of dry rotini pasta, cooked. Before I boil the pasta, I saute a small chopped onion, in butter. Then 8 oz. fresh mushrooms, sliced, in butter, in the pasta pot, then set aside, and boil the pasta. While the pasta is boiling, the broccoli is mw'd, then drained over the draining pasta. Back in the empty pasta pot goes the onion, mushrooms, adding the flour while stirring and slowly adding the chicken broth, stirring and heating til thickened. In goes the sour cream and cubed ham. I use a large ham steak when I make this). Lastly, in goes the drained rotini and broccoli for the final gentle mixing at a medium-low temp. The speedy thing w/ this recipe is to have everything prepped ahead of time. It's truly tasty. It makes enough that we have it for 3 meals and it doesn't deteriorate ---really holds up and maintains fabulous flavor and texture. Everyone raves. I aim for a generous 2 cups of broccoli pieces.

I am surprised at how good this was. Made 1/2 the recipe for the 2 of us and we ate all of it. Used about 8 oz. or less of penne. New way to use up ham to change up from the usual leftover ham recipes. I used 6 oz. of water and 1 t. better than bouillon chicken version. It is very good. Used regular instead of lite sour cream to use that up. I will be making this again. Also I didn't make it in the microwave so it's fine either way. I cooked the broccoli in a different pan, drained it.

I made this on the top of the stove instead of the microwave, but it was still very quick and easy to make. It's nice all-in-one meal that kids and adults alike will enjoy. I used light sour cream and it worked just fine. I realized that I had no mushrooms, so I left them out, but I'll be sure to use them next time I make this. Thanx for posting!
