Mashed Cauliflower Comfort Food

ingredients
- 1 head cauliflower
- 2 ounces chevre cheese (soft, low fat goat cheese)
- 1 tablespoon Molly McButter
- salt & pepper
directions
- Cut cauliflower (including stems) into chunks. Microwave in a covered dish for 8 minutes.
- Combine all ingredients in bowl of food processor and blend to desired consistency (don't forget to scrape down the sides).
- Sit down to a big bowl of warm, creamy, delicious comfort food that won't ruin your healthy diet!

Delicious! What I like best about this recipe as opposed to the many others on 'Zaar is that it's only 3 ingredients (fast and very easy to make) and doesn't use a lot of butter, cream and cheese. We are fortunate to have a local cheese producer http://www.prairiefruits.com/ that makes award winning chevre. Served this with Recipe #262248 Thanks for sharing!

If you LOVE the taste of chevre (goat cheese) you will love this recipe. I used 1 1/2 tablespoons of margarine instead of the butter buds. It added moisture to the dish. When I cooked the cauliflower in the microwave, I put it in a dish and covered with plastic wrap. When the cauliflower was cooked, there was extra moisture. I also added that moisture to the recipe. I used a hand mixer to cream/blend the recipe which reminded me of a chunky not creamy mashed potatoes but excellent tasting! I will make this again but I won't use goat cheese; a personal preference, perhaps feta will make five stars for me? Thanks for submitting a recipe not filled with butter, whole milk, etc. that results in a comfort food.

Like the others, I used light tub margarine since that is what I had in the house. The flavor of the goat cheese is really good in this (I love goat cheese paired with mashed sweet potatoes). I ended up doubling the amount after tasting it though. And I think you could add even more. This yields more servings than stated, so increasing the goat cheese wouldn't raise the fat/person that much. A nice way to change up your veggie side dish.
